Zhenjiang (Jenjung) Heng Shun Vinegar

The home of vinegar in the whole of China is the Heng Shun Venegar Factory. It manufactures the vast majority of all the vinegar needs across the vast nation. 

Yes, there is vinegar and there is vinegar. The Hengshun Company has been making it for many a long year and the footprint of the factory takes up a few city blocks. Of course the visitor centre is a small part of this behemoth.  A simple process that yields complex flavours the genesis of  the magic elixir is... sour rice wine!

Traditional implements are still used to move the bran from tub to tub each  day.
